Support a best-in-class pastry program for the Bakery, Cafe and Verōnika Restaurant & Bar
Develop and execute a wide-ranging menu of dessert items
Plan, organize and take responsibility for the preparation of dessert items, pastries, cakes, ice creams, sorbets, fruit compotes, breads, chocolates and show pieces
Ensure superior quality and consistency of all pastry items
Train and mentor culinary team members on recipes and preparation procedures
Prepare in accordance with quality, availability and seasonality
Maintain standard recipes and techniques for pastry preparation and presentation
Prepare and execute seasonal and bespoke menu concepts for events
Ensure smooth kitchen operations with a focus on guest and employee experience
Assist in developing policies and procedures to enhance quality
Maintain compliance with Health & Safety and company policies
Implement DOH requirements and HACCP safety program
Assist with cleaning and organizing the Pastry station
Be present in the kitchen during prime service periods
Attend daily service lineups and required meetings
Implement operational excellence decisions for property development
